Kelp Noodles

I'm eating my kelp noodle salad as I type this. :)

What I'm eating was inspired by an Asian-infused salad I thoroughly enjoy found at my local natural market made with organic angel hair pasta. Of course, I quickly adopted my own version at home but had been thinking how I could make a more raw version. Or as Rawdorable says: rawify it. It's not completely raw as I use toasted sesame oil but close enough for me. BTW, if you haven't picked up a copy of Rawdorable's raw cupcake e-book, I highly recommend you do!

I was trying to find some info on kelp noodles themselves - you know, health benefits. I haven't found much other than they're low in fat and calories and high in mineral content, particularly iodine.

Even though I had sampled kelp noodles before I don't remember much about them. Many raw blogs as of late had been talking about their use of the seaweed so it got me thinking about my salad. Kelp noodles would serve as the perfect replacement for the angel hair pasta.

I will admit that the noodles are a wee bit funky. I don't mind the texture really. In this salad, their crunch actually fits perfectly. There is a twang or particular flavor that stands out from time to time for me but I believe I've moved past it. :) I think it just needed some time to sit and absorb all the flavors. I would eat these again trying other variations. Secret's in the sauce right?

Now for the recipe.

HiHoRosie's Asian Kelp Noodle Salad
One 12 oz bag kelp noodles, rinsed and drained well
One red bell pepper, diced
3 spring onions, chopped
2 TBS toasted sesame oil
3 TBS Nama Shoyu or Tamari
cayenne pepper to taste
sprinkling of black sesame seeds and/or white sesame seeds
Mix all together and serve.

Of course, I'm of the mindset that one can tailor this to suit their needs or tastes so you might find you like less or more of something. You could also add in cilantro, carrot or cabbage/bok choy.

Ramblings and a Giveaway (CLOSED)

Do you ever have one of those weeks that seems to get away from you? You wake up and *poof* the week’s over? Yeah, that was me last week. Weekend too. So so busy. Not anything in particular but just…was. I had blog posts started but gone unfinished (catching up on blog reading is a whole ‘nother beast), housework still to do (laundry never ends!), office work and of course, sunshine to be enjoyed. I did get to enjoy that wonderful sun with YS and YS2 in between those busy moments and at the end of the week, that’s all that really matters. Sweet memories.Happy spring everyone! It’s officially here! Yay! Hopefully, wherever you are the snow is finally melting and new life beginning with birds singing their glorious songs. Summer is my favorite season but nothing beats those first signs of spring you know? I feel so alive again, although, I have to admit we Pacific Northwesterners having been enjoying spring for some time now. We’ve enjoyed our bragging rights while we could since it’s not often we get to. Seems everyone is just now catching up to us. ;) I just hope we continue on this warming trend because gardening season is upon us and we want to reap the rewards! Photo:

Speaking of gardening, who’s gardening this year? We are again at the community garden (click
here for a pic of our garden last year - this season I hope to help out hubs). We have three plots to enjoy, which is about 1200 square feet in total. Wahoo! We’ll have YS2 “helping” out too. He’s not walking yet (phew!) but he will soon enough so I’ll need to find him some gardening boots. But gotta get him a gardening hat first. I found one at a lovely nursery yesterday but didn’t feel like spending $20 for it knowing he’d grow out of it before the season ended. So the hunt is on!

I finally bought
kelp noodles – spotted them at my local natural foods market (yes, IN THE STORE! Didn't have to search online or go out of my way to a specialty store to get them). I believe I’ve sampled these once and what I remember is that they were neutral, non-offensive tasting. Hee hee! This is a good thing; they’re supposed to be neutral and pick up the flavors of other ingredients. I have an idea of what I’d like to do with them so I’ll let you know how it pans out...or I might just try one of the twins' variations first.

Remember those Boomi and Prana bars I recently
reviewed? Weeellll…how would you like your shot at a gift pack? A gift pack consisting of a recycled Prana Bar tote, a Prana laynard, and full size samples of each of their Super Charger bars, actually make that two full size samples of each for a total of seven bars. Confession: a Prana bar thief intercepted two bars and promptly ate them not knowing these were meant for a giveaway. Whoopsie! I’m terribly sorry but hopefully this won’t deter anyone from entering the contest – there are two packs so each pack will be down just one bar. About the Super Chargers themselves, I personally haven’t tried them but have enjoyed the other bars (the thief did enjoy the SC bars though). Do you have major food cravings, especially for sweets, breads or alcohol?

Yes? Read on…

Candida albicans is a fungus that is found on the skin and mucous membranes of everybody. Nothing wrong with this when in balance but when its growth increases drastically it can be devastating. The imbalance of excessive candida is called candidaisis.

Here’s the tricky part: how do you know if you suffer from candida? This is one of those common conditions that’s difficult to diagnose. Again, this is because it’s present in everybody and creates a variety of symptoms. If you find yourself being adversely affected at times, you’ll want to evaluate your diet and your health. If you find yourself addicted to carbs/sugars (even fermented foods) or consume antibiotics (i.e. medications, birth control pills, foods containing antibiotics), those things feed the candida. Unfortunately, as this growth gets more and more out of control you may find yourself not feeling well physically, mentally and/or emotionally. Your immune system is weakened and you’re exhausted and crabby. Of course, this just makes matters worse because it’s either misdiagnosed or we, being unaware, keep feeding the wrong bacteria.

There are some great alternatives that you can eat such as veggies (fresh steamed and sea vegetables), almonds and unprocessed oils. If you still eat animal products, try sea foods, eggs or poultry without added antibiotics and hormones. Once you have been off sugar and carbs for a few days, you’ll begin to feel in control again, as though a fog has been lifted from your brain. After a week or so, you may slowly add fresh fruits. Fruits MUST be eaten alone and on an empty stomach. You can also add natural whole grains like brown rice, millet, amaranth, rice cakes, flat breads (made without yeast) to your diet. Continue to avoid yeast containing foods for awhile (like breads, wine and beer) to maintain control of the fungus growth. Make salad dressing with lemon juice instead of vinegar. Bake, poach, boil and steam your food instead of frying (or eat more raw *wink*). There are a lot of culinary possibilities.

For a lot of us, we have changed our lifestyles in dramatic ways. Switching to a healthier diet, especially one consisting of living foods is a terrific start. A new diet will definitely help you feel better because you’re not feeding the candida but it's not actually cleaning out the problem. In order to clear out the excess growth and rebuild healthy flora pairing it with a specialized cleanse is needed.
