The Best Laid Plans...

Hope you all had a fine weekend. Me? Well, you can guess based on the title and opening line things didn’t quite go as planned. Before I begin, I’d like to say to whoever is charge of making weekends a 2-day thing to please consider 5 days. That would be really nice. K, thanks. Saturday started out as planned: busy. To get me going, I made my usual smoothie with banana, spinach, peanut butter, cacao, and other tasty things. YS2 likes this too so we shared. To spare you the play-by-play, we ran our errands and did our things. We did stop at an Asian market that just opened a little closer to us. And we did our part to support them by sampling a few veggie eats (we ignored for the moment the possible bad things in it [animal products were avoided, however]) and picking up a cute miso bowl fo...

Ahhh...Sunshine!

Finally, we're getting our week of summer here in the great Pacific Northwest! It's been loooonnnnngggg overdue! Our poor widdle garden. ;( But hey, our strawberries should be ripe enough to pick today or tomorrow. So excited! And tomatoes? Well, just maybe we'll get one or two this year. hee hee! It's a wait-n-see sort of thing. Hopefully, you back-East people haven't all melted yet! And Lauren , hang in there! I can't imagine being pregnant in hot weather. No thanks! Thanks all for your support and your comments on my last post - my post of I'm-here-but-I'm-not (wink). Glad you all understand that life just takes you in different directions, whether by choice or not, and some things just have to sit on the back burner for awhile such as blogging. Let’s Make a Toast

I recently made the Almond Toast from the Café Gratitude book . Whoa! Are these puppies good! Not that I eat puppies mind you but these toasts do have a crunch and texture like toast. The first time I made these they were half eaten by hubby, who obviously loved them, so there wasn’t enough left to do anything with them. Not that I cared; they made great snacks. I made them again, a double batch, with the intention of making half the plain version and the other half the rosemary version but was too lazy to do the rosemary one as it was getting late in the evening when I was doing this. Again, I missed out on doing anything more with these than eating them with salads or as snacks. My intention is that for next time is to make the tomato-basil bruschetta topping for these. You know it’s gotta be good! Serve them up as an appetizer to zucchini pasta with pesto…oh now, that sounds divine. I did the lazy-man’s way of dehydrating these. My M.O. if you will. Something Borrowed - Part I

We’ve been busy visiting our local library lately. It’s a good way to test out those many raw (un)cookbooks before buying them. Of course, it’s also a good way to support the libraries and the authors. Since checking out some of these books (I have many more on my list!) I have determined Ani's Raw Food Kitchen and Raw Food Real World are must-haves for me. My birthday is NOT coming up so if you’d like to get me a present… Ha ha! But seriously folks, I think those two cookbooks are great to have. Ani’s book is one that could be used daily as the recipes are pretty simple and casual. The RFRW one is more gourmet (by my standards) and one I wouldn’t use daily but just would love to have on hand. I still want to try the Spicy Peanut Coconut Noodles with Ginger and Lime recipe from that book but what in the world is galangal ?! And where do I get it? And if it tastes like ginger can’t I just use more regular ginger the recipe calls for? Anyway, tangent…. The other books I’ve checked ...
