Beet It-Just Beet It-Woo!

Did the title get you to sing the MJ song? You're welcome. :) So I mentioned before that I did some dehydrating over the weekend. Awhile back I received an email from someone who was asking about dehydrating beets – how to get them crispy. Honestly, I’ve never tried beets before. I’m not a huge raw beet fan except in juices. Typically, I like my beets roasted. However, beets are so pretty and earthy and full of wonderful nutrients that I was willing to try my hand at this. You never know, taste buds change and I might end up loving them. I don't have many pics because it was late from when I first put them to when I got them out so here's one: For my experiment, I bought a bunch of organic beets (3 medium sized ones to this particular bunch) and one gigantic sweet potato (it was orange flesh – a yam? All Hail to Kale!

King Kale that is. Are you in need of some vitamin K, A or C? Well, King Kale has got a boatload for you! It’s got so many great health properties (i.e. cancer-fighting) which I won’t get into now assuming you already know about them. But did you know that its leaves become sweeter from a little frost bite? Obviously, not going to be happening now with summer but you know. Note for the future. You're welcome. :) As previously mentioned , I bought some local kale bunches in hopes of making chips. Well, I did. Yay me! I made some cheesy ones courtesy of Averie . I mixed them up (I added some cayenne to the cheesy goodness): Put them in the dehydrator: And then…they never made it out. It was like *poof*! They disappeared. Yeah, so no pics. Ha ha! Blah blah blah blah blog

Howdy folks! It’s been awhile hasn’t it? Well, I’m still here. You haven’t gotten rid of me yet. Ha! Over Memorial Day weekend I was going to blog about how busy I’d been with the week and weekend before but I got too busy to do even that. I’d spent some time in the kitchen (the weekend before), which kept me occupied. No desserts. :( Instead I made some kale chips (EVOO, garlic and salt – I didn’t have any cashews to make cheesy ones), salsa-flax crackers and spring rolls with peanut sauce (yummy!!! Not all raw [spring rolls that is] but close enough for me – I’ve made these many times before but haven’t really blogged about it other than mentioning it a time or two). I just noticed none of those foods go together, not that I was trying for that. I just felt like making those things. I even took pics but they all suck so I’m hesitant to post about it. This Lil Piggie Went to Market

First off, thanks for all the well-wishes for my ego and my knee ! I’m pretty much all better now. Knee is 98% healed. My scrapes are healing (ew) and there’s only a little tenderness, mostly felt when I first wake up. It was brutal that first day because after the post office I came back to my office and every time I got up from my chair I’d be limping around from it getting stiff. Not one of my finest moments but not one of the worst either (oh yeah, I got one of those but maybe I’ll share for another time). And just in case it wasn't clear, the hip-shaker dude did try to help me and asked if I was okay. I was too embarrassed to let him or anyone near me, plus the adrenline made me move lightening fast so there was no opportunity anyway. He's still clearly at fault though wouldn't you say? :D He probably had a good laugh about it all, I know I would and did! This morning I woke up with this RANDOM old song in my head. Why? How?
