Quiet Days

Remember to enter my giveaway for a Trek Light Gear double hammock . You really don’t want to pass this one up (but for the other entrants they do, you know, to better their chances *wink*). And don’t let the cooler weather keep you from entering (if you’re a hardcore outdoorsy type then weather isn’t an issue) because this hammock is so lightweight and compact that storing wouldn’t be an issue until you’re ready to take out. Or you know, the holidays are coming up; would make a great gift…anyway, go enter if you haven’t. We took Caleb to the mall the other night just for fun – window shopping and people watching. I always enjoy that and I know Caleb had fun. We let him walk around a bit, albeit carefully. He still hasn’t taken to wearing shoes so he was walking around in his socks. Hey there! Thank you for all your sweet comments on my "brag" video - the one of YS2 talking and laughing. He is our pride and joy and truly a dream baby in so many ways so once in awhile I just have to show him off. Thanks for allowing me to do that. I try not to get carried away by doing it all the time here but you'll still see some pics of him and maybe the occasional video too. I just don't want to do it too much that you'll go ugh, not another one! ha ha! You wouldn't do that though, would you? :) Switching gears, I gotta gripe. Kelp Noodles

I'm eating my kelp noodle salad as I type this. :) What I'm eating was inspired by an Asian-infused salad I thoroughly enjoy found at my local natural market made with organic angel hair pasta. Of course, I quickly adopted my own version at home but had been thinking how I could make a more raw version. Or as Rawdorable says: rawify it. It's not completely raw as I use toasted sesame oil but close enough for me. BTW, if you haven't picked up a copy of Rawdorable's raw cupcake e-book , I highly recommend you do! I was trying to find some info on kelp noodles themselves - you know, health benefits. I haven't found much other than they're low in fat and calories and high in mineral content, particularly iodine . Even though I had sampled kelp noodles before I don't remember much about them. Many raw blogs as of late had been talking about their use of the seaweed so it got me thinking about my salad. Kelp noodles would serve as the perfect replaceme...

The (Sweet) Taste of Success

See that? That merlot lettuce, fancy green leaf lettuce (no idea what it's called or the variety but it sure is pretty!), and spinach all came from our garden. We grew that. As frustrating as the weather has been this year and the problems associated with gardening, especially as first time gardeners, we're really proud of our latest harvest. These are OUR carrots. So wonderfully sweet and perfect looking. Those look that way after only a simple scrub. No peeling. Try to get carrots like that at any store. The end result: a delicious homegrown salad. Okay, not all the ingredients here are homegrown obviously. I'm just so amazed at how wonderfully tasty this salad was. It was infused with love and life that is indescribable. And with the added finishing touches to the salad it was worthy for royalty. Me. Z:-D

Anti-Pesto (ha ha!)

This super yummy dish was named and created by Yardsnacker just for me. It has all the makings of pesto on top of tomatoes but not blended in the traditional pesto way. The basil is fresh from our herb garden unfortunately the tomatoes were bought while we wait for ours to ripen. Yardsnacker's Anti-Pesto 1 large tomato, sliced into wedges slivered sweet onion slices, optional small handful of pine nuts, coarsely chopped fresh basil, chopped or torn into shreds drizzle EVOO (extra virgin olive oil) drizzle balsamic vinegar S&P to taste Toss and eat! Summer Lunch

Our lunch, Cabbage Mustard Garlic salad , recipe courtesy of Leora : Mine doesn't look as lovely as hers but it was oh so very D-LISH! The following is Leora's salad recipe: Ingredients 1 savoy cabbage or napa cabbage olive oil to coat brown mustard to coat 2 or 3 crushed garlic cloves salt, pepper to taste juice of 1/2 fresh orange or lemon for color: bits of shredded purple cabbage and/or carrot (optional) Chop the cabbage into bite size pieces (that’s the most complicated part of this recipe). Add the shredded carrots and/or purple cabbage. Put in a large bowl. Coat the cabbage with olive oil. Then coat it with mustard. Crush in your garlic cloves, and mix. Sprinkle with salt and/or pepper to taste. Squeeze on lemon or orange juice, and mix well. Tip on shredded carrots: you can use your food processor, or you can peel off little piece of carrot with your carrot peeler. My notes: I used napa cabbage.
