I Think I Need Therapy

Image
So I made kale chips again this weekend. And AGAIN they’ve been snarfed before being completely dry. Ah well. That just means they were tasty right? But seriously, I need help keeping my paws away. I just don’t have the patience to wait for such tasty things, I guess. What will I ever do when I make an ice cream cake or something?! It'd be silly to think there'd ever be pictures... recycled pic from last time My cheesy kale chips consists of taking a cup of cashews (soaked or unsoaked – I’m typically lazy or forgetful so I don’t soak most times), a third cup of nutritional yeast, juice from half a lemon, half of a sweet red bell pepper, one garlic clove, one teaspoon of Celtic sea salt, half to a whole teaspoon of pure maple syrup (or agave), and one to two tablespoons of (filtered/spring) water (optional). Then blend it all up till smooth and massage onto kale pieces. I dry at 115 in my dehydrator until well, I never get that far. Until crispy dry if you’ve got the will ...

All Hail to Kale!

King Kale that is. Are you in need of some vitamin K, A or C? Well, King Kale has got a boatload for you! It’s got so many great health properties (i.e. cancer-fighting) which I won’t get into now assuming you already know about them. But did you know that its leaves become sweeter from a little frost bite? Obviously, not going to be happening now with summer but you know. Note for the future. You're welcome. :) As previously mentioned , I bought some local kale bunches in hopes of making chips. Well, I did. Yay me! I made some cheesy ones courtesy of Averie . I mixed them up (I added some cayenne to the cheesy goodness): Put them in the dehydrator: And then…they never made it out. It was like *poof*! They disappeared. Yeah, so no pics. Ha ha! Guess that should tell ya they were that good. Thanks Averie! I made another batch of kale chips; this time courtesy of Ani (chipotle ones from her new book  [awesome book btw - get a copy if you don't already!]). Sorry – ...

Finally, we're getting our week of summer here in the great Pacific Northwest! It's been loooonnnnngggg overdue! Our poor widdle garden. ;( But hey, our strawberries should be ripe enough to pick today or tomorrow. So excited! And tomatoes? Well, just maybe we'll get one or two this year. hee hee! It's a wait-n-see sort of thing. Hopefully, you back-East people haven't all melted yet! And Lauren , hang in there! I can't imagine being pregnant in hot weather. No thanks! Thanks all for your support and your comments on my last post - my post of I'm-here-but-I'm-not (wink). Glad you all understand that life just takes you in different directions, whether by choice or not, and some things just have to sit on the back burner for awhile such as blogging. Part of the craziness or much of it was due to the fact we were moving. UGH! I hate moving (almost as much as I hate being cold but that's #1 on my list). And with a one year old that made things a ...

Trees and Things

Image
While driving around my neighborhood after running a few errands I noticed along one road some potential new growth. Growth in the meaning of a new house or two soon to be built. What made me sad were all the beautiful trees freshly cut down and piled on top of each pushed to the side. So sad. I understand growth and expansion; I mean I hope to one day own my own home but it’s bittersweet to see these tall beautiful trees just mowed down for a house or two that will have little land space. Sigh… I wasn’t sad for long though as I saw a tweet the next day from Moms Wear Your Tees about a plant-a-tree-in-state-parks program by Odwalla  (she also about it here too). Synchronicity? Anyway, it’s free, just pick a state and post through fb or your email address and you’re done. If you’re not in the US, I don’t see why you couldn’t plant a tree as well so I say click on WASHINGTON to plant a tree for us! Yeah, some will say we have plenty of trees here but nah, lots of trees are good. ...
