Beet It-Just Beet It-Woo!

Did the title get you to sing the MJ song? You're welcome. :) So I mentioned before that I did some dehydrating over the weekend. Awhile back I received an email from someone who was asking about dehydrating beets – how to get them crispy. Honestly, I’ve never tried beets before. I’m not a huge raw beet fan except in juices. Typically, I like my beets roasted. However, beets are so pretty and earthy and full of wonderful nutrients that I was willing to try my hand at this. You never know, taste buds change and I might end up loving them. I don't have many pics because it was late from when I first put them to when I got them out so here's one: For my experiment, I bought a bunch of organic beets (3 medium sized ones to this particular bunch) and one gigantic sweet potato (it was orange flesh – a yam? Thanks, and some ramblings

Howdy kids! I wanted to say thanks for all the comments and compliments on my last post . Your comments mean a lot to me and I’m thankful for each one. Not just on that post but all posts. Normally, I enjoy replying back to each one but unfortunately, my time didn’t allow me to so that’s why I wanted to thanks to all of you here and now. How’s that for timing with Thanksgiving around the corner? Ha ha! But I am being serious. You all are the best! ( source ) Kinda sad though that Halloween came and went, dontcha think? I always feel bad for Thanksgiving. It comes and goes even quicker, like hurry-up-and-eat-clear-the-dishes-so-we-can-get-out-the-Christmas-decorations-and-shop-all-the-crazy-sales! Ugh. I do celebrate Christmas but I don’t like being rushed through the holidays, let alone anything else. One local radio station is already playing holiday music round the clock (totally serious – it’s 24 hours, non-stop – I have caught myself singing along so I can’t really complain all...

Fruityliciousness

You gotta love summer. Summer is all about seasonal fruits and veggies and lately we’ve been having our share of fruityliciousness (like that made up word?). Okay, this post isn’t going to be revealing anything new and might be more exciting to me than to you. In fact, Lauren just did a fruity post so I almost feel like I’m being copycat but really, I had intentions of doing this post before I knew she was (not saying she was copying me either) but apparently we were on the same fruity wavelength so here’s to great minds thinking alike (*wink*) Baby was getting hot so getting some yummy juicy fruit was a top priority! He's really not crabby as he looks but he was getting a little hot in the car. A/C to the rescue! We picked up some organic champagne grapes. They’re so cute! I Heart Good Days!

Yesterday was a good day. I ♥ it very much. Let me tell you about it: I love good deals as much as the next guy. Love farmer’s markets (or the equivalent) just as much as the next guy next to him. And gotta love local fresh organic produce too (as much as the next guy next to the next guy next to him sort of thing). Well…yesterday was major scorage for us (yes, I like to make up words – sometimes they’re more fitting). We made an impromptu stop at a local u-pick blueberry farm. Acres of blueberries! Those who know me know I do not enjoy blueberries (or “bloobs” as they’re affectionately called by many of you) in the least. In fact, I hate them. I think they’re gross. Before you go ape on me and tell me how weird I am (ha ha! I’m kidding!), I will agree with you that yes, it’s weird and downright lame I don’t like blueberries. I’ve been told more than once in my life of this fact. However, I recently learned I can actually eat fresh ones. Ones that haven’t been put into any...

Chia and a Blog Fave

Happy Sunday! Hope the weekend was fabulous for you. The weather here is a total drag. It’s June and we’re still fighting rain. :( At least ½ the weekend (yesterday) was good weather wise. We were able to get out into the fresh clean air and enjoy some much needed and welcome sun beams. Thanks to The Daily Raw Café and Chia Seeds Direct  for my two-pound bag of chia seeds. I’m so glad I won these because we were out. They sure are sticky little buggers huh? Especially with a one year old. Caleb/YS2 loves ‘em. They’re usually added to smoothies and whatnot. google images I made Aimee’s latest chia pudding recipe – twice in one day, in fact. YS2 was particularly a fan – can you say snarf ?! Well, at least there’s no doubt where he’ll be getting his calcium ! He even loved the banana nut milk by itself. Kelp Noodles

I'm eating my kelp noodle salad as I type this. :) What I'm eating was inspired by an Asian-infused salad I thoroughly enjoy found at my local natural market made with organic angel hair pasta. Of course, I quickly adopted my own version at home but had been thinking how I could make a more raw version. Or as Rawdorable says: rawify it. It's not completely raw as I use toasted sesame oil but close enough for me. BTW, if you haven't picked up a copy of Rawdorable's raw cupcake e-book , I highly recommend you do! I was trying to find some info on kelp noodles themselves - you know, health benefits. I haven't found much other than they're low in fat and calories and high in mineral content, particularly iodine . Even though I had sampled kelp noodles before I don't remember much about them. Many raw blogs as of late had been talking about their use of the seaweed so it got me thinking about my salad. Kelp noodles would serve as the perfect replaceme...

Busy Summer Days

Love summer! It seems every chance we get we’re out in the sun or in the garden just enjoying life. Here in Seattle, there is beauty all around. You’ve heard of our rain. Everyone thinks it rains all the time (it doesn’t, maybe just half the year-ha ha!) but sometimes it’s just cloudy, which can be a drag. However, when the sun is shining you just can’t dispute how gorgeous it is here. It’s been so sunny lately I LOVE it! You won’t hear me complaining about the warmer temperatures either. I’d rather be hot than cold any day; I just love hot weather anyway and we don’t get it enough for me to complain. I will complain about my office building turning up the air conditioning way too high! Holey moley! I work in an icebox. Anyway, Sarabeth’s recent post reminded me of a picture I took recently of Mount Rainier while riding in the car. It’s the best I could do. Summers = busy. I’m sure your summers are no different.
